Cherry Tomato & Gorgonzola Pasta Recipe

A quick and easy pasta recipe that is delicious yet simple, a great Meat Free Monday, quick mid week meal or great to serve to a crowd.

Heat your oven to 220 degrees.

Cook as much pasta as you want for the meal you are catering for.

Add to a baking tray washed cherry tomatoes, crushed cloves of garlic and a generous sprinkling of olive oil, roast until your tomatoes beign to burst, this takes about 10 minutes, remove the tray from the oven.

Add cubed gorgonzola cheese and return the tray of tomatoes and cheese to the oven for a minute or until the cheese is melted.

Once the cheese has melted, remove the tray from the oven and add the hot pasta to the tomato cheese mixture.

Serve and enjoy.
