A quick and refreshing addition to a summer BBQ table, a different accompaniment Chinese or Thai meal or a lovely side dish to serve with a BBQ. So easy to make and who ever eats these Chinese Pickled Cucumbers with Chilli will love them.

Ingredients
  • 1 English cucumber, de-seeded and cut into long baton shapes +-5cm long pieces
  • For the marinade
  • 3 Tablespoons icing sugar
  • 2 Tablespoons Chinese clear rice vinegar (or cider vinegar)
  • 1 red chilli chopped or to taste
Method
  1. Mix all the ingredients together and allow to marinade for 20 minutes or over night.
Tips
To add the Quick Pickled Cucumbers to a salad or a bowl of rice use a peeler, to peel the cucumbers into long ribbons.
