A light, fluffy and easy recipe using store cupboard ingredients. They are a great treat for a coffee morning, packed lunch treat or to give as a baked gift when visiting friends.

Ingredients
- 200g plain flour
- 100g caster sugar
- 50g soft brown sugar
- 2½ teaspoons baking powder
- ¼ teaspoon salt
- 90ml milk
- 80ml sunflower oil
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract or ½ teaspoon vanilla bean paste
- 2 large eating apples - peeled, cored and chopped (red or green)
- 1 teaspoon cinnamon powder
Method
- Preheat oven to 180C / Gas 6 and line a muffin tray with cases.
- Add the flour, both caster and brown sugar, baking powder and salt into a large mixing bowl and stir to combine. Stir in the apples and coat in the flour mixture.
- In a jug add the milk, oil, egg and vanilla, mix lightly with a fork.
- Add the wet ingredients to the dry ingredients and stir to just bring everything together.
- Spoon the mixture into muffin cases.
- Bake for 15-20 minutes, until golden brown and a skewer inserted comes out clean.
Tips
Although you have two different types or sugars in the muffins, they are not very sweet.
The sweetness depends on the apples you use.
If you feel your apples are not sweet, add a drizzle of honey over the top of the muffin once they are cooked or add a sprinkling of icing sugar on top of the muffins before cooking.
