Cumin Flavoured Potatoes (Tava Potatoes) Recipe

A take on a traditional Cypriot dish from the village of Pano Lefakara, the village of my maternal grandparents. Tava is flavoured with cumin, tomatoes and onions and I have used this base to make a tray of potatoes to compliment my BBQ.

Ingredients
  • 3 large Maris Piper or King Edward Potatoes
  • 1 onion sliced (optional)
  • 1 large tomato cut into thick slices or 1 small handful of cherry tomatoes, halved
  • 1 Tablespoon roasted and ground cumin
  • salt and pepper to taste
  • 2 Tablespoons olive oil
Method
  1. Heat the oven to 200 degrees Celsius.
  2. Heat a roasting tray in the oven whilst you are preparing the potatoes.
  3. Peel and cut the potatoes into thick wedges or slices.
  4. Sprinkled over the ground roasted cumin.
  5. Pour the olive oil onto the potatoes and gently massage the cumin and oil into each potato.
  6. Add the optional onion and the sliced or the halved cherry tomatoes.
  7. Roast the potatoes according to the timings on the packet or until the potatoes have softened and taken on a golden colour.
