Quick No-Cook Bánh mì Pickles

- 1 cucumber, peeled into ribbons (avoid seeded core)
- 1 carrot, peeled into ribbons
- For the marinade
- 3 tablespoons icing sugar
- 2 tablespoons Chinese clear rice vinegar (or cider vinegar)
- 1 red chilli chopped or to taste (optional)
- Mix all the marinade ingredients together in a bowl.
- Add the cucumber and carrots.
- Stir to coat every strand.
- Top your sandwich.
If you can find a daikon radish peel half or a quarter depending on its size and add it to the pickling liquor which you will need to double.
