Irish Rarebit Cheese on Toast
 
 
A delicious tasty and easy to mix together cheese on toast. With a nod to a rarebit with a bit of Guinness which is not detectable in the taste at all but brings the mixture together into an oozy cheesy mass. I had a little Guinness left over from the festivities you can add any or no alcohol that you have open.

Ingredients
  • 2 tablespoons Guinness (can be omitted if you don't have it)
  • a level teaspoon of English mustard
  • ½ teaspoon of Worcestershire sauce
  • 5 drops or to taste Tabasco sauce
  • 1 organic egg
  • 250g of grated Cheddar cheese
  • 4 slices sourdough bread or your favourite loaf
Method
  1. Preheat the oven to 180 degrees.
  2. Mix all the ingredients together in a bowl and set aside.
  3. Toast four slices of bread lightly and spread the rarebit mixture on top of each slice.
  4. Bake the bread for about 5 -10 minutes until the cheese looks as if it has changed texture and forms a glossy mass.
  5. Then turn the oven to grill and until the cheese bubbles and turns golden brown.
  6. Serve with a side salad or its tasty on its own.
Tips
If you do not want to cook with alcohol you can substitute the Guinness for 2 Tablespoons of mayonnaise.
Instead of Guinness you can use white wine, ale or beer.
