This is a simple no fuss casserole that can bubble away in the oven, using the natural goodness of the ingredients added to create a delicious warming supper.

Ingredients
  • 800g stewing steak
  • 1 swede peeled, diced into 1-inch pieces
  • 3 potatoes, peeled
  • parsley stalks, finely chopped
  • cauliflower outer leaves chopped finely
  • 3 carrots, cubed
  • 1 chicken or beef stock cube
  • salt to taste and be a little heavier on the pepper
  • water to cover two inches of the base of the dish and more may be needed halfway through the cooking time
Method
  1. Place all the ingredients into a casserole dish with a lid.
  2. Cook for 21/2 to 3 hours or the length of time that your meat needs (refer to the butcher or packet).
  3. Check the casserole halfway through and add a little more water so the ingredients don't catch and burn.
  4. Serve plain as bowl food or over cauliflower mash.
Tips
If you prefer the vegetables to hold more of their shape cook the meat for an hour and add the vegetables for the last hour.

This can easily be cooked on the hob, just remember to stir the pot more often.

For Vegans omit the meat and use a vegan-friendly stock.
