Dough for Ravioles

Pockets of pasta filled with a halloumi mint filling, boiled and napped with brown butter and sprinkling of grated halloumi.

Ingredients
  • Dough
  • 3 cups plain/cake flour
  • 3 eggs
  • 1 teaspoon salt
  • 1 Tablespoon olive oil
  • +- ¼-1/2 cup of water
Method
  1. Machine
  2. Fit the dough hook to your mixer.
  3. Add all the ingredients except the water.
  4. Mix and with a gentle stream add the water, slowly and waiting for the drops to incorporate.
  5. Add enough water to make a smooth, dough that it not sticky.
  6. Knead the dough on low speed until the surface appears glossy and smooth, about 5 minutes.
  7. Cover with a dish towel and let the dough rest for at least an hour.
Tips
We made 90, 5cm glass cut and 4cm folded square ravioli.
