New York Style Red Pepper Relish gives the sausage a extra depth, the red peppers are sweet and the vinegar add a zingyness.

  • 2 roasted red peppers, finely chopped (jarred works well)
  • 11/2 -6 teaspoons garlic cloves, coarsely chopped (you can use roasted garlic for a milder flavour)
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • salt and pepper to taste
  • Optional
  • a handful of finely chopped flat-leaf parsley
  1. Mix all the ingredients together, chill for an hour and enjoy.
  2. For a puree style sauce you can add all the ingredients (except the parsley if using) and pulse to a course texture.
