A quick and easy bake that gives you all the things you love about pecan pie without the pastry. They are mixed in one bowl which is a lovely bake to make if you are in halls, baking with children or if you are time poor.

Ingredients
185g unsalted butter, melted
350g soft brown sugar
2 teaspoons vanilla extract
A pinch of salt
5 egg yolks, lightly beaten with a fork
175g plain gluten-free flour
1 teaspoon gluten-free baking powder
¼ teaspoon xanthan gum (this can be omitted)
150g pecans, roughly chopped
Method
Preheat the oven to 180°C (350°F).
Line and grease a 30cm x 20cm shallow baking tin. Remember to leave a little extra greaseproof paper overhang on both sides to make lifting out the pecan squares easier.
In a bowl, combine sugar, melted butter, vanilla, and salt, and mix them with a wooden spoon.
Stir in the egg yolks and mix well.
Add the nuts into the gluten-free flour and mix to coat them in the flour.
Mix in the nuts and flour and baking powder to the egg mixture, stir to incorporate all the ingredients together.
Pour the pecan mixture into the prepared tin and bake for 25–30 minutes, until golden and a skewer or toothpick comes out clean.
Remove the tin from the oven and cool completely in the tin, before cutting the pecan squares into your desired-sized pieces. Remember, they are sweet, so a small square is perfect.
The pecan squares can be stored in an airtight container for up to 3 days.
Tips
Notes Replacements Use 3 whole eggs instead of the 5 egg yolks. With Gluten Option Replace the gluten-free flour with plain flour. Piece Size These are sweet treats, so I tend to cut a tray into 2-inch squares. You may choose to cut them into larger pieces, hence the 16–30 piece range.
