Jodi's Pecan Squares mixed in one bowl and cut into squares of pecan deliciousness.

Ingredients
  • 185g unsalted butter, melted
  • 350g soft brown sugar
  • 2 teaspoons vanilla extract
  • a pinch of salt
  • 3 large eggs, lightly beaten with a fork
  • 175g plain flour
  • 1 teaspoon baking powder
  • 150g pecans, roughly chopped
Method
  1. Preheat the oven to 180 degrees Celsius.
  2. Line and grease a 30cm x 20cm shallow baking tin.
  3. Remember to leave a little extra greaseproof paper overhang on both sides to make lifting out the pecan squares easier.
  4. In a bowl, combine sugar, melted butter, vanilla, and salt and mix them with a fork.
  5. Stir in the eggs and combine.
  6. Add the flour, baking powder, and pecan nuts to the egg mixture and stir.
  7. Pour the pecan mixture into the prepared tin and bake for 25–30 minutes until golden and a skewer comes out clean.
  8. Remove the tin from the oven and cool completely before cutting the pecan squares into your desired sized pieces. Remember, they are sweet, so a small square is perfect.
  9. The pecan squares can be stored in an airtight container for up to 3 days. .
