A vibrant, no-cook chutney that's easy to blend together and will make your mouth sing.

Ingredients
  • ½ large bunch coriander (60g)
  • ¼ bunch mint (30g, no stalks)
  • 4 cloves of garlic
  • 1 cm piece of fresh ginger
  • 1 small teaspoon green chili, or to taste
  • Juice of ½ lemon
  • ¼ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • Salt to taste
  • Optional: a pinch of Hing
  • Cold water to thin the sauce
Method
  1. Blend all the ingredients so that they amalgamate.
  2. You may need a splash of water to help the mixture on its way, depending on your blender.
  3. Once the ingredients are amalgamated, add a little water at a time to achieve the desired consistency.
  4. The green chutney should be the consistency of shop-bought mint sauce.
Tips
Serving ideas:
Use as a dip for popadoms, samosas, pakora or in a sandwich.
