3-Ingredient Peanut Butter Cookies (Gluten and Dairy-Free) mixed in one bowl and within 40 minutes you will have a full cookie tin.

Ingredients
  • 1 egg
  • 1 cup of sugar (I used dark soft brown sugar, but any sugar works)
  • 1 cup peanut butter (smooth or crunchy – your choice)
Method
  1. Line a baking tray with greaseproof paper.
  2. Preheat the oven to 180°C (fan 160°C).
  3. Mix the ingredients together.
  4. Roll into balls, then flatten with the palm of your hand or press with a fork in a criss-cross pattern.
  5. Bake for 8-10 minutes.
  6. Allow to cool completely on the baking tray before transferring to an airtight container.
