Recipe type: Mains
Cuisine: Chinese
Servings: 2-4
Ingredients
1 Tablespoon ginger, chopped
2 garlic cloves, crushed
125ml/½ cup hoisin sauce
4 Tablspoons soya sauce
2 Tablspoons honey
4 Tablspoons Japanese rice vinegar or white wine vinegar
125ml/1/2 cup water
300g/1 tin cannellini beans, rinsed
400g/1 tin red kidney beans, rinsed
1 chopped red chilli, if desired
Handful of chopped coriander to serve
Optional for a thicker sauce
Dilute 1 Tablespoon of cornflour in 4 Tablespoons of water
Method
Add all the ingredients into a medium saucepan, simmer on low, stirring often for 5-10 minutes or until the beans have warmed through.
If you would prefer a thicker sauce, add the diluted cornflour and cook for a further 3 minutes stirring continuously, until the sauce has thickened.
Serve as bowl food topped with the optional chopped chilli and corriander, over a baked potato, noodles or on toast.
Tips
Vegans can substitute the honey for golden or maple syrup. The recipe can easily be doubled or tripled, for a large crowd. Serves two as bowl food, serves 4 if served on a baked potato, over noodles or on toast.
