Caramel and Mint Pudding
The decadence of the caramel, cream and peppermint adds a wonderful ending to any meal. In South Africa there is a version of this dessert known as a Peppermint Crisp Tart, a staple on the dessert table of most South African homes in the summer. Tasting my version transported me back to wonderful childhood memories with each mouthful.
I have lightened the traditional recipe, which in my day was a layer of whole biscuits, topped with a layer of caramel, then a layer of cream and grated peppermint chocolate. This was repeated for two layers and topped with a generous grating of chocolate. My quick and easy recipe is a lighter version of the original and you don’t lose anything from the taste other than a few calories. The biscuits are scattered onto the bottom of the serving dish, glass or bowl, the cream and caramel are beaten together and a scattering of chocolate tops the dessert. The peppermint flavouring infuses into the whole dessert. As the cream and caramel are moist this seeps into the biscuit crumbs and binds them together. If you want a cut and serve cake you can always add butter and bake a biscuit crumb base.
If you have anyone who isn’t partial to peppermint the dessert is delicious without the peppermint chocolate and can be replaced with a grating of delicious milk or dark chocolate or left off completely. Using gluten free biscuits or omitting the biscuits completely this dessert can be served to celiac friends and family.
Serving the Caramel and Mint Dessert in individual shot glasses, bowls or glasses this can be an elegant dinner party shot glass dessert or a delicious feed crowd dessert. The recipe easily copes with being doubled or quadrupled. Try to remember that a little goes a long way, it is very rich.
- ½ packet digestive biscuit crumbs
- 1 tin caramel treat (Carnation Caramel)
- 330ml whipping or double cream
- 10 quality street peppermint match sticks
- Add 1cm of the biscuit crumbs to the bottom of each glass or small serving bowl.
- Beat together the caramel treat and whipping cream to a thick consistency.
- Blend or chop the peppermint matchstick to a fine consistency.
- Add a few tablespoons on top of the biscuit crumbs.
- Top the pudding with a generous covering of chocolate.
- Refrigerate for 3 hours or overnight.
- Serve and enjoy
This would be a lovely dessert over the festive period when you need a dessert that can feed a crowd. Add a few mini candy canes to make it look festive. It’s especially handy as it can be made up to two days in advance.
