Easy Chocolate Chip Cookie Recipe

These cookies are quick and easy to make with the kids and delicious to serve as a desert with ice cream. They are slightly crunchy and a little chewy. We have made them with white chocolate chips, fudge chunks, smarties and dark chocolate chips, they work with raisins and nuts too. It is a great create your own cookie recipe.

A quick and easy chocolate chip cookie that are always a hit with whoever eats them. I have served them with a glass of milk to children and as a dessert, with vanilla ice cream at a BBQ. These are also a great 'make' idea for the Macmillan's World's Biggest Coffee Morning.

Ingredients
  • ½ cup softened butter
  • ¼ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1¼ cups plain flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 cup chocolate chips
  • To serve as a dessert
  • ½ tub vanilla ice-cream
Method
  1. Preheat the oven to 180 degrees.
  2. Cream together the butter, sugar, egg and vanilla essence in a medium bowl until light and fluffy (about 3 minutes).
  3. In a separate bowl sift together the flour, salt, baking powder and bicarbonate of soda.
  4. Beat the dry ingredients into the butter mixture and mix well.
  5. Add in the chocolate chips and mix.
  6. Depending on the size of the cookies you are wanting to make, take a teaspoonful or Tablespoonful of the mixture and roll into a ball between the palms of your hand. Place the cookie dough ball onto an ungreased tray, leaving at least a 5 cm space around the smallest cookies and a larger space for the bigger cookies.
  7. Once on the tray and with the palm of your hand, press down on the dough to flatten the cookie.
  8. Bake for 12-14 minutes of until light brown in colour.
  9. Allow the cookies to cool on the tray for a couple of minutes before using a spatula to lift the cookies off. Be mindful that if you lift the cookies to early the cookies will break, lifted to late the cookies will stick to the tray.
  10. Makes 6-18 cookies depending on the size.
Tips
Substitute chocolate chips for fudge chunks, white chocolate chips, smarties, raisins and nuts.
