5 Eggs Two Desserts
Do you want to know how to turn 5 eggs into two delicious desserts? Do you love meringues, pavlova and pecan pie? If so read on… I have tweaked a recipe to use 5 eggs and transform them into two tasty desserts. First, you whip up a batch of Jodi’s Pecan Squares, a lovely alternative to pecan pie. They are quick and delicious. The Pecan Squares can be enjoyed with or without gluten. The gluten-free option will be loved by your gluten and gluten-free friends and family, they are undetectably gluten-free—there is no funny aftertaste (when you know, you know).
While the pecan squares are baking, and using the egg whites, you can whisk up a batch of Michelle’s pistachio meringues. If you are not a fan of nuts, you can omit them from the recipe and just add 1 teaspoon of vanilla bean paste.
When you serve your friends and family, your dessert offering looks impressive, and the hands-on time is an hour—the oven does the rest of the work.

- 185g unsalted butter, melted
- 350g soft brown sugar
- 2 teaspoons vanilla extract
- A pinch of salt
- 5 egg yolks, lightly beaten with a fork
- 175g plain gluten-free flour
- 1 teaspoon gluten-free baking powder
- ¼ teaspoon xanthan gum (this can be omitted)
- 150g pecans, roughly chopped
- Preheat the oven to 180°C (350°F).
- Line and grease a 30cm x 20cm shallow baking tin. Remember to leave a little extra greaseproof paper overhang on both sides to make lifting out the pecan squares easier.
- In a bowl, combine sugar, melted butter, vanilla, and salt, and mix them with a wooden spoon.
- Stir in the egg yolks and mix well.
- Add the nuts into the gluten-free flour and mix to coat them in the flour.
- Mix in the nuts and flour and baking powder to the egg mixture, stir to incorporate all the ingredients together.
- Pour the pecan mixture into the prepared tin and bake for 25–30 minutes, until golden and a skewer or toothpick comes out clean.
- Remove the tin from the oven and cool completely in the tin, before cutting the pecan squares into your desired-sized pieces. Remember, they are sweet, so a small square is perfect.
- The pecan squares can be stored in an airtight container for up to 3 days.
Replacements
Use 3 whole eggs instead of the 5 egg yolks.
With Gluten Option
Replace the gluten-free flour with plain flour.
Piece Size
These are sweet treats, so I tend to cut a tray into 2-inch squares. You may choose to cut them into larger pieces, hence the 16–30 piece range.
