Rocky Road Recipe
We were invited to friends for tea on Sunday and I asked what I could bring, a treat for the children was requested. Most children love Rocky Road, I tweaked the traditional recipe slightly, by adding healthier dark chocolate and using Date Nectar instead of golden syrup. Neither of my tweaks were detected by the children, all they could taste was a hint of caramel courtesy of the Date Syrup.

This easy Rocky Road can be made ahead of time and will happily keep in the fridge for as long as you or the family, can resist eating it!

Ingredients
- 200g butter
- 4 tablespoons golden syrup or Date Nectar
- 400g malt, digestive or Rich Tea biscuits (Marie Biscuits), crushed
- 150g mini marshmallows
- 200g dark chocolate (60% cocoa), broken into pieces
Method
- Prepare the tin
- Line a 30cm round tin (at least 5cm deep) or a 24cm square tin with greaseproof paper or plastic wrap.
- Place the chocolate, butter and golden syrup or Date Nectar in a large microwave-safe glass bowl. Microwave in short burst and stir often to combine.
- Add the crushed malt biscuits and mini marshmallows to the chocolate butter mixture. Stir well until everything is evenly coated.
- Spoon the mixture into the prepared tin and press it down firmly, with the back of a spoon, making sure there are no gaps. Compacting the mixture well will help prevent the Rocky Road from falling apart when you cut it.
- Cover with plastic wrap and refrigerate for at least 1 hour, or until firm.
- Cut into slices or squares and enjoy!
