No Bake Coconut Energy Bites
This is a lovely recipe that my amazing neighbour shared with me, which I have tweaked a little. The best way to describe the taste is a cross between coconut ice, a naked bounty bar or the flavouring of Raffaello chocolate. High praise for 4 ingredients, but it is really easy and delicious for the time it takes to blend together. The ingredients are healthy and are a good way to satisfy a sugar craving. I have an adapted recipe for vegans.
- 1 cup desiccated coconut
- •3½ tablespoons maple syrup (you can add 2 tablespoons if you prefer your treats less sweet)
- •2 tablespoons butter or virgin coconut oil
- •½ teaspoon vanilla extract

- •1 cup desiccated coconut
- •3½ tablespoons golden syrup (you can add 2 tablespoons if you prefer your treats less sweet)
- •2 tablespoons virgin coconut oil
- Line a mini muffin tin with cling wrap.
- Place all the ingredients into a food processor.
- Blend until all the ingredients come together.
- Roll teaspoonful’s into small balls or press tablespoonful’s into the muffin tin.
- Chill and serve as a snack, treat or with coffee as a healthy petit four.
- Keep and serve from the fridge.
- The number made will depend on how big or small you want your bites to be.
