We all tend to over indulge on the weekend, dinners with friends, ordering takeaways and on Monday we have regrets.

My solution is to keep Monday’s Meat Free, any leftover Sunday Roast can be carried over to Tuesday’s dinner.

The Meat Free Monday Campaign is was started in 2009 by Sir Paul McCartney and his daughters Mary and Stella.

I loved the fact that if you don’t eat meat on a Monday for a year, it will reduce your carbon foot print to the equivalent of not driving your car for a month. Sir Paul McCartney said that we all want to try and do our bit for the planet, but we don’t know how, this is an easy way to help the environment, the animals and ourselves.

I have listed ingredients that are alternative protein sources, some we know well and some will give you good inspiration to make a delicious Meat Free Monday dish. Alternative Protein Sources:  Eggs, Milk and soya milk, cheeses, pulses and ones that I was not unaware of green peas, quinoa, nuts and nut butters, beans, chickpeas, tofu, edamame, spinach, broccoli, chai seeds, sesame seeds, sunflower and poppy seeds, seitan a wheat protein (tastes like chicken, looks like duck) and unsweetened cocoa powder.

Reluctant families will react better to Meat Free Dishes if they are twists on a family favourite. Here are some Meat Free Monday dinner options:

Or you could keep life on a Monday simple, make stir fry vegetables with my satay sauce, a Butternut Thai Green curry or serve a tomato or pesto pasta.

Today’s the day, do something that will make a difference to your health, the planet and Monday’s will be something you will look forward to.
