Vegetables with a Twist

Are you looking for some ideas to make your vegetables a little more exciting? Try these simple additions to you favourites.

Oriental Parsnips – roast and spice parsnips with miso paste (found in the Oriental section of the supermarket), honey, sesame oil and top when cooked, with chopped spring onions and fresh coriander.

Thyme Flavoured Potatoes – add fresh thyme, bay leaves and crushed garlic to the your roasting tray  or to the water while boiling your potatoes for mash.

Brussels Sprouts with Pecan Nuts and Cranberries -a great side to serve with cold meats or your Christmas Turkey or Gammon. Pan fry sliced Brussels sprouts in olive oil until al dente, add chopped pecan nuts and dried cranberries. Bring everything together with a balsamic vinegar and olive oil dressing and serve warm or at room temperature.
