What to Do with: Sweet Potato

I bumped into a friend and she was saying she wanted to incorporate more sweet potato into her meals.

Sweet Potatoes are healthier than potatoes and contain Vitamin B6, Vitamin C, Vitamin D, Iron, Mag­nesium, Potassium.

They are high in carotenoids and if eaten with the skin on, they are high in fibre.

So you can see why she was keen to get them into her diet.

These are my ideas for using Sweet Potatoes:

  • Top your cottage pie or fish pie with sweet potato mash
  • Instead of a baked potato serve a baked sweet potato with all the usual toppings
  • Make a Thai style sweet potato curry, the sweet potato soak up the Thai flavorings brilliantly
  • Sweet Potato Fish cakes are delicious
  • Sweet Potato Wedge Style Fries cooked in the oven: massage oil olive, crushed garlic, cumin and cayenne pepper onto the wedges of sweet potatoes, roast in a hot oven for about 30-40 minutes turning half way, until the fries are crispy and golden
  • A warm salad of roasted sweet potato, peppers, mushrooms, courgettes and aubergine with a pomegranate dressing, is a great light lunch,  picnic or lunch box idea
