On Wednesday I hosted an indoor Summer Garden Party. It was for a feedback session with the acclaimed Garden Designer Alex Lindsay evergreengardendesign.com. and his students. My friend is studying with him and they needed a blank canvass garden to measure up, design and present to a ‘client’ and my garden fitted the bill perfectly. The students’ designs were amazing with beautiful planting ideas and innovative solutions to everyday garden needs. I thanked them with a simple working lunch menu:

Salmon, Cream Cheese and Chive Quiche

Sliced Beetroot, Goats Cheese and Crushed Honeycomb Salad

Crisps and dips

Dessert

Lemon Drizzle cake with strawberries and clotted cream

Chocolate Brownie

Cucumber, Strawberry, Mint and Passion fruit Cooler, served in a Kilner jar

Tea, coffee and homemade shortbread

This menu would work well for a summer picnic or garden party.

A very big thank you to Alex and the team for their plans, once a few major work projects are behind us we look forward to implementing some of the designs.

Salmon, Cream Cheese and Chive Quiche

For the Salmon Cream Cheese and Chive, quiche use my Quiche Lorraine recipe and replace the ham with 120g smoked salmon trimmings soaked in the juice of 1 lemon for 5 minutes (this adds a hint of lemon which is lovely), add chopped chives, scatter over the salmon and reserve a few chives for garnish.

Cream cheese spread on the base, scattered with salmon soaked in lemon juice and sprinkled with chopped chives. Simple and delicious.

For the Beetroot, Goats Cheese and Honeycomb Salad

Place the sliced boiled not pickled beetroot on the bottom of your serving plate, crumble over goats cheese and sprinkle on some crushed honeycomb. I don’t serve this salad with a dressing, it is lovely as it is.
