Simple Lunch Idea Tomato Red Onion Salad

The simplicity of chopping onions and tomatoes and eating them with bread or on cucumber rounds, transports you to sunnier climates. This is a wonderful lunch addition to make with staple ingredients.

For those working from home and having to feed yourself or your family indoors more often than usual, you may be scratching your head as what else you can make for lunch. This has been our go to lunch, with the fruits of our home grown tomatoes and when they were not quite ripe, with a packet from the supermarket.

We all make this combination be it for a bruschetta, the start of a panzanella salad, but sometimes we can have it just with a slice of bread.

I use red onions in this combination, there is a sweetness you get from red onions that you don’t get from white onions.

So we all know how to make this, it is child play, all you need to do is to use ripe tomatoes, a ratio of 2/3 chopped tomatoes to 1/3 chopped red onion, you can of course increase or decrease the ingredients to your taste. Add in your favourite vinegar, olive oil, salt, pepper and a sprinkling of dried oregano or any chopped fresh herbs that you enjoy. You can get ahead and make this the night before too.  The salad will release its juices which sits in the bottom of your container, the juices released are delicious as a dip for bread or as a drizzling sauce, over your chosen sandwich.

This simple combination got my non-tomato loving child to eat tomatoes.

If you need a rough guide of ratios for the dressing this is what I use:

 

  • Salad
  • 4 red tomatoes
  • 1 red onion
  • Dressing:
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • salt and oregano to taste

I have been adding this dressing, it is so flavoursome and adds a different element to the salad:

  • Dressing:
  • 31/2 Tablespoons olive oil
  • 3 Tablespoons red wine vinegar
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • 1 Tablespoon pomegranate molasses
  • 1 Tablespoon maple syrup

Last thought, if you are packing a lunch this recipe can be deconstructed, tomato salad in a leak proof container, bread in another. Sit wherever you choose at lunch and scoop out mounds of the salad onto your chosen bread, cucumber round or in a wrap (with humous it is delicious).
