Easy Thai Dinner Party Menu

A wonderful combination of ready made ingredients and quick homemade menu items that when served together, creates a memorable, easy and delicious Thai Dinner Party Menu.

Vegetable Spring Rolls with soya sauce (shop bought)

All my friends travel around an hour by car to get to our house, so I wanted to have something for them to snack on with drinks when they arrived.

Quick No Cook Pickled Cucumbers – they are lovely and refreshing

Bowls of Thai and Chinese Prawn Crackers

For the sit down starter:

I used my crab and Crab & Sweetcorn Soup recipe with a slight Thai twist.  I added a few tablespoons of Waitrose’s Frozen Spicy Thai Mix. If you can’t get the spice mix you can use a tablespoon of chopped fresh lemon grass and chillis to taste and all the fresh ingredients that are stated in my Crab & Sweetcorn Soup recipe .

Main Course:

Use a good quality Thai Green or Red Curry paste (I like the Mae Ploy) with added fish, beef or chicken, baby sweetcorn, asparagus, pea aubergines, all served over Jasmine Rice. Adding the vegetables (which my son rightly says are not all authentically Thai!) into the curry, I negated serving a separate vegetable dish.

For a vegetarian meal you could add a selection of your favourite vegetables to the Thai Green Curry Sauce, unfortunately due to the shrimp paste in the sauce you cannot serve the cheat pastes to vegans. I love butternut, courgettes, aubergines, potatoes, sweet potatoes and green beans.

Dessert

My quick and easy White Chocolate Pots A light, delicious make ahead chocolate dessert.

An exotic fruit salad with star fruit, passion fruit and any other Thai fruit you can find, served with vanilla ice cream.

I also serve Pandoro cake slices (Panettone without the fruit, it resembles the very light and spongy cakes the Thai’s serve) with my homemade caramel ice-cream.

It is the start of a very busy catering season and sometimes we just need something quick easy, informal and fun to eat and serve with friends and family before/after Christmas or for New Years Eve.
