Entertaining Friends Midweek

We all lead busy lives and it is always a treat to be hosted for lunch at friends midweek. We constantly look for formulas that work so that the hostess and guests can relax.

My friend Chrysoula hit the nail on the head with this menu and idea. She served us delicious mussels and freshly baked bread which I followed with caramelised oranges in Pimm’s. The menu was easy for both of us to put together, I made the oranges the night before and they were fresh and light after we had dipped one too many slices of the amazing bread.

My best convenience food mussels are from Asda or Aldi, Waitrose’s mussels are small and the sauce a little too garlicky.

Chrysoula made us a different and delicious salad dressing which I have used and I can honestly say it is my new favourite. The dressing marries the sweet with the savoury by using pomegranate molasses and counterbalances the tartness with maple syrup which is lovely. I have made the recipe with and without oregano and garlic it is delicious both ways.

A different and delicious salad dressing that enhances roasted vegetables and crisp salad leaves alike.

Ingredients
  • Dressing:
  • 50ml olive oil
  • 3 tablespoons red wine vinegar
  • ½ teaspoon salt
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon maple syrup
  • Optional
  • 1 teaspoon oregano
  • 1 teaspoon crushed garlic
Method
  1. Stir until incorporated or shake in a little glass jar and enjoy.
Enjoy catching up with your friends or family.
