Feta Roasted Red Pepper Chilli Dip
This simple dip it is addictive and quick to make, using feta roasted red peppers and chilli. Serve as a dip or sauce. I served the dip as a sauce with a roasted shoulder of lamb, salad and pita bread. The following day we enjoyed the leftover sauce as a dip with crisps. My one child doesn’t enjoy feta cheese, but ate and went back for the sauce with the lamb and dip the next day. Always keep trying peoples tastes do change.
This is how it is made, using 1/3 of a block of feta cheese, 2 roasted red peppers from a jar, 4 tablespoons of Greek yogurt. Dice the peppers and with a fork roughly mix the feta and the peppers together. Add the balance of ingredients and mix. Taste and if you need a little more zing add a tablespoon of red wine vinegar. Now for the chilli, add a scant teaspoonful or to taste. Stir and enjoy this super simple dip with pita bread, crisps, roasted vegetables or your favourite roasted meat or fried tofu.
