Lamb Houmous Salad Sandwich

This was a lovely quick sandwich that I made at my cousins house, with ingredients she had in her fridge.

A wonderful use of any leftover Sunday Roast meat be it lamb, chicken, beef or pork.

A lovely summer sandwich using left over roast lamb and made in minutes.

Ingredients
  • 1 cup chopped leftover roast lamb,
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 3 Tablespoons houmous
  • 1 Tablespoon natural yoghurt
  • shredded iceberg lettuce
  • chopped tomatoes
  • use any bread you enjoy (sourdough, baguette, wrap or toasted pita bread)
Method
  1. Fry the lamb over a gently heat to warm the meat through.
  2. Add the ground cumin and ground coriander to the lamb and stir to combine.
  3. Mix the houmous and yoghurt together in a bowl, add the warm lamb and stir together.
  4. Depending if you like a saucy sandwich, add the lettuce and tomato to the houmous mixture.
  5. If you prefer a drier sandwich, add a bed lettuce and the tomato to your chosen bread and top with the lamb mixture.
  6. Enjoy
Tips
Use any leftover meat, beef, pork or chicken all work well.
