Beetroot Black Bean Fritter Recipe

Such a quick and easy recipe to get beans and beetroot into yours and your children’s diet.

1 tin of black beans, 1 packet Duchy organic beetroot in natural juices, 1 small tin sweet corn, 1 egg, +- 1 cup of plain flour, 1 teaspoon of baking powder and a handful of chopped coriander (optional), salt and pepper to taste. For vegans omit the egg and bind the mixture with 1/2-1cup of raw oats until the mixture reaches dropping consistency. 

Add all the ingredients into a food processor.  Blend everything together, except the flour.

Add enough flour to make a batter that is a dropping consistency.

Gently fry dollops of the Beetroot, Black bean and Sweet corn Fritters in a non-stick pan.

Serve with a tablespoon of my Quick Salmon Pate or a poached egg. For vegans serve with avocado houmous.

 

My plate consisted of octopus carpaccio, baguette, pickled anchovies and the Beetroot, Black Bean and Sweet Corn Fritters with a dollop of Quick Smoked Salmon Pate.
