Crispy Maple Pancetta

A quicker and easier way to top a pancake with maple bacon is to use slices of pancetta instead. I line a tray with pancetta, add and rub a little maple syrup onto each slice, then grill the pancetta slices in the oven until they are crispy. This takes minutes rather than 10s of minutes with bacon.

For extra maple flavour dip the cooked pancetta in maple syrup and serve.
