No Cook Celebration Meringue Cake
Sometimes you need a no cook idea for a celebration and the reasons can be varied: remodelling your kitchen, celebrating your birthday on a camp site, living away from your main home in a kitchen with limited equipment and maybe you just aren’t a baker. This easy celebration cake is perfect for all the above scenarios and for the meringue lover too.
A shop bought pavlova style meringue base, filled with whipped cream and built up to a lovely dome shape with mini meringues, will make an amazing centrepiece on any celebration table. You can make the same creation with homemade meringue if you have the time. If you are buying your meringues try and buy the best quality meringues you can find. I find Farm or Home Industry shops have the best meringues. If you can’t get to these shop, use the supermarkets Finest or Special ranges.
Nestle vibrant edible flowers in amongst the mini meringues, which can be ordered online. Or you can always add the person’s favourite chocolate or fruit instead.
This easy celebration cake can be made up in minutes and can be enjoyed by gluten free friends too.
This creation was made by my mum for my nieces 6th birthday and she popped a few pink jelly babies in amongst the candles, meringues and flowers. My mum says this can be made in a flash and a blur! Love her.
