What is Sloppy Joe? It is similar to the mixture you make for chilli con carne, but without tomatoes. This would be a great feed a crowd dish and a different way to use a packet of mince.

Sloppy Joes are a great feed a crowd dish. You can have this meal on the table in 30 minutes or have it bubbling in the background for hours, if you have the time. It makes for a versatile dinner served in a bread roll or over a baked potato.

Ingredients
  • 400g beef mince
  • 2 x 400g tins kidney or mixed beans
  • 1 green pepper, cut in quarters
  • 1 onion, cut in quarters
  • 1 cloves garlic, crushed
  • 1 carrot, cut in quarters
  • 1 stick of celery, cut in quarters
  • 1 stock cube
  • 1 heaped teaspoon cumin powder
  • 1 heaped teaspoon coriander powder
  • ½ teaspoon cayenne pepper
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 Tablespoon date syrup or brown sugar
  • 1 Tablespoon olive oil
Method
  1. In a blender or food processor add the vegetables and enough water to blend everything to a paste.
  2. In a pot heat the olive oil and fry the mince stirring to separate the meat and until the mince takes colour.
  3. Add all the spices to the mince and fry for a few seconds until the aroma from the spices is released.
  4. Add in the blended vegetables and stir everything together.
  5. Add the beans, crumble in the stock cube and add the date syrup or brown sugar.
  6. Allow the mixture to simmer for 30 minutes minimum or for an hour if you have the time.
  7. Serve in a crusty roll or over a baked potato.
Tips
Vegans & Vegetarians
Replace the beef mince with lentils or Quorn Mince

If you have time, you can chop and fry the vegetables, rather than blending them.

If you want a sloppier mixture, add a little more water to the mince, while it is cooking.
